As the days grow longer and the sun’s warmth begins to fill the air, there’s no better way to celebrate the changing season than with a light, refreshing dish. This spring and summer, we’re all about simple ingredients that pack a punch—perfect for outdoor dining, garden parties, or just a casual meal on a sunny afternoon. Enter: The Grilled Peach & Burrata Salad.

This salad is a delightful blend of juicy, caramelized peaches, creamy burrata, peppery arugula, and a touch of honey-balsamic dressing. The smoky grilled peaches bring a touch of summer nostalgia, while the burrata’s luscious texture pairs beautifully with the tangy sweetness of the fruit. Add some fresh herbs and a sprinkle of toasted nuts, and you’ve got a dish that’s bursting with flavor and color.

Ingredients:

• 4 ripe peaches, halved and pitted
• 1 tablespoon olive oil
• Salt and pepper to taste
• 1 ball of burrata cheese (closest substitute is mozzarella)
• 4 cups arugula or mixed greens
• ¼ cup toasted almonds or walnuts, chopped
• 1 tablespoon fresh basil, chopped
• 2 tablespoons honey
• 2 tablespoons balsamic vinegar
• 1 teaspoon Dijon mustard

Instructions:

Prepare the Peaches: Preheat your grill or grill pan over medium-high heat. Brush the cut sides of the peach halves with olive oil and season with a pinch of salt and pepper. Place the peaches on the grill, cut side down, and cook for about 3-4 minutes, until grill marks form and the peaches soften slightly. Remove from the grill and set aside to cool for a minute.

Make the Dressing: In a small bowl, whisk together honey, balsamic vinegar, and Dijon mustard. Season with a pinch of salt and pepper. Set aside.

Assemble the Salad: On a large plate or platter, arrange a bed of arugula or mixed greens. Tear the burrata into pieces and place on top of the greens. Add the grilled peach halves, cut side up, and scatter the toasted nuts and fresh basil over the top.

Drizzle & Serve: Drizzle the honey-balsamic dressing over the salad, ensuring each piece gets a little bit of sweetness. For an extra pop, season with a little more freshly ground black pepper and a light drizzle of olive oil if desired.
